AFGHANI MALAI KOFTA
Preparation time 10 minutes
Cooking time 25-30 minutes
Serve 2-4

Ingredients
For Mawa Kofta
100 gms Mawa, मावा
200 gms Paneer, पनीर
1 medium Potato (boiled & grated) आलू
A pinch of green cardamom powder, हरी इलायची का पाउडर
Salt to taste, नमक स्वादअनुसार
½ inch Ginger (peeled & grated) अदरक
1 no. Garlic cloves, grated, लहसुन
¼ tsp Black peppercorns, crushed, कुटी काली मिर्च
1 tbsp Coriander leaves, chopped, धनिया पत्ता
2 no. Green chillies (less spicy & chopped) हरी मिर्च
5-6 no. Raisins, chopped, किशमिश
2-4 no. Almond, chopped, बादाम
2 tbsp Refined flour, मैदा
1 tbsp Cornstarch, कॉर्नस्टार्च

now you have to prepare paste’For Paste
¼ cup fresh Mint leaves, पुदीना पत्ता
1 cup fresh Coriander leaves, धनिया पत्ता
9-10 no. Cashew Nuts, काजू
2 no. Green chillies, less spicy, हरी मिर्च
1 tbsp Oil, तेल
½ tsp Coriander powder, धनिया पाउडर
½ tsp Turmeric powder, हल्दी पाउडर
2 no. Cloves, लॉन्ग
1 no. Black cardamom seeds, बड़ी इलायची के दाने
1-2 no. Fenugreek seeds, मेथी दाना
4-5 no. Garlic cloves, लहसुन
2 inch Ginger (peeled & roughly sliced) अदरक
2 tbsp Curd, beaten, दही
2 medium Onion, cut into half, प्याज
Salt to taste, नमक स्वादअनुसार
1 ½ cup Curd, beaten, दही

For Gravy
1 tbsp Ghee, घी
1 inch Cinnamon stick, दालचीनी
1 no. Bay leaf, तेजपत्ता
½ tsp Caraway seeds, शाही जीरा
Prepared Paste, तैयार किया हुआ पेस्ट
1 cup Water, पानी
1 no. Green chili, slit into half, हरी मिर्च

For Stuffing of balls
1 no. Apricot, chopped, खुबानी
1 no. Almonds, बादाम
2 no. Fox nut, मखाने;you can use anything to stuff your kofta like rasins popkorn ,cheese,panner etc

Other Ingredients
Oil for frying, तेल तलने के लिए
Refined flour, for dusting, मैदा

For Garnish
Chili oil, मिर्च का तेल
Fresh cream, ताजा क्रीम
Black peppercorns, crushed, कुटी काली मिर्च
Coriander sprig, धनिया पत्ता

Process
For Mawa Kofta
In a bowl, add mawa, and paneer with a little amount of nicely grated veggies like carrot and cabbage and mix it well and knead until mushy with the help of hands

Add boiled potato, green cardamom powder, salt to taste, ginger, garlic, black peppercorn, coriander leaves, green chilies, raisins, and almonds[grated], and knead it in a soft dough.


Keep it aside to rest for 5-10 minutes.
Take the mixture, stuff it with raisin or finely chopped nuts make balls or give any desired shape.


Dust it with refined flour and cornstarch.
In a kadai or pan, heat oil, drop the kofta, and fry until golden brown in color on medium flame.


Transfer it to an absorbent sheet and keep it aside for further use.

For Paste process
In a bowl, add fresh mint leaves, coriander leaves, cashew nuts, green chillies, oil, coriander powder, turmeric powder, cloves, black cardamom seeds, curd, onion and mix it together.
Transfer it to a grinder jar and grind it into a smooth paste.
Add curd and mix it well.
keep it aside for further use.

 now we have to convert the paste into the gravy

For Gravy
In a kadai or a sauce pot, add oil, once it’s hot, add cinnamon stick, bay leaf, and cumin seeds, and let it splutter.


Add the prepared paste and saute it for 7-8 minutes or until cooked well.
Add water, let it cook for a minute, and finish the gravy with green chilies.


Transfer it to a serving dish and place fried koftas.do not mix koftas directly mix only at serving time
Garnish it with chili oil, fresh cream, crushed black peppercorn and coriander sprig.
Serve hot with roti.

Tips for an Authentic Malai Kofta Experience:

Paneer: Use fresh, homemade paneer for the koftas to ensure a creamy and authentic taste. It can be easily made by curdling milk with lemon juice or vinegar and then straining the curds.

Texture: Achieve the perfect texture for the koftas by ensuring the mashed potatoes are smooth and free of lumps. This will result in koftas that are soft on the inside and crispy on the outside.

Aromatic Spices: Experiment with the spice blend to suit your taste preferences. Adding a pinch of nutmeg or cardamom powder can elevate the flavors and add a delightful aromatic note.
