For Masala
2 tbsp Black peppercorns, काली मिर्च के दाने
1 tsp Cumin seeds, जीरा
1 heaped tbsp Coriander seeds, धनिया की बीज
3-4 no. Green cardamom, हरी इलायची
1 no. Black cardamom, बड़ी इलायची
¼ tsp Fennel seeds, सौंफ
3-4 no. Bay leaf, तेज पत्ता
½ inch Cinnamon stick, दालचीनी
Salt to taste, नमक स्वादअनुसार
1 ½ tsp Degi red chili powder, देगी लाल मिर्च पाउडर
½ tsp Turmeric powder, हल्दी पाउडर
A pinch of asafoetida, हींग

For Ginger Garlic Paste
8-10 no. Garlic cloves, लहसुन
1 ½ inch Ginger (peeled & roughly sliced) अदरक
2 no. Green chillies, हरी मिर्च
Salt to taste, नमक स्वादअनुसार

For Anda Tawa Masala
1 tbsp Oil, तेल
1 heaped tbsp Ghee, घी
Prepared Ginger Garlic Paste, अदरक लहसुन का पेस्ट
¼ tsp Cumin seeds, जीरा
3 medium Onions, chopped, प्याज
1 medium Tomato, chopped, टमाटर
1 tsp Tender Coriander stem, finely chopped, धनिया के डंठल
1 heaped tbsp Prepared Masala, तैयार किया हुआ मसाला
1 cup fresh Tomato puree, ताज़े टमाटर की प्यूरी
Little water, पानी
1 tsp Oil, तेल
6-7 no. Hard boiled eggs, cut into half, उबले हुए अंडे
1 tsp Prepared Masala, तैयार किया हुआ मसाला
1 Green chili (less spicy & sliced) हरी मिर्च
2 tbsp Coriander leaves with stem, roughly chopped, धनिया पत्ता
1 small Tomato, sliced, टमाटर
Little water, पानी
2 tbsp Butter, cubed, मक्खन

For Garnish
Coriander sprig, धनिया पत्ता
Tomato, sliced, टमाटर

For Anda Pulav
Remaining Anda Tawa Masala, तैयार किया हुआ अंडा तवा मसाला
2 cups Cooked rice, पके हुए चावल
1 ½ tsp Prepared Masala, तैयार किया हुआ मसाला
1 Green chili, roughly chopped, हरी मिर्च
1 small Tomato, cubed, टमाटर
2 tbsp Coriander leaves, chopped, धनिया पत्ता
1 heaped tbsp Butter, cubed, मक्खन
Salt to taste, नमक स्वादअनुसार
1 tsp Lemon juice, नींबू का रस

For Garnish
fresh Coriander sprig, धनिया पत्ता
fresh Mint sprig, पुदीना पत्ती

For Tawa Masala
In a shallow pan, add black peppercorns, cumin seeds, coriander seeds, green cardamom, black cardamom, fennel seeds, bay leaf, cinnamon stick, salt to taste, degi red chili powder, turmeric powder, asafoetida and dry roast it for a minute on medium flame.
Transfer it into a mixer grinder jar and grind into a fine powder.
Keep it aside for further use.

For Ginger Garlic Paste
In a mortar pestle, add garlic cloves, ginger, green chili, salt to taste and make a coarse paste.
Keep it aside for further use.

For Anda Tawa Masala
In a flat deep tawa or shallow pan, add oil, ghee, once it’s hot, add prepared ginger garlic paste, cumin seeds and saute it for a minute.
Add onions and saute it until translucent. Add tomato, coriander stems and cook it well on moderate heat.
Add prepared masala and saute it well. Add tomato puree, little water and let it cook well.
Transfer the masala side onto the tawa edges, add oil, place boiled eggs, sprinkle some prepared masala and shallow fry them until golden.
Add green chili, coriander leaves stems, tomato, little water and mix it altogether.
Finish the tawa masala with some butter.
Transfer it to a serving dish or bowl, garnish it with coriander sprig and tomato sliced.
Serve hot with ladi pav or roti.

For Anda Pulav
In the same tawa, add cooked rice and mix well. Sprinkle prepared masala, add green chili, tomato, coriander leaves, butter, salt to taste, lemon juice and mix it well.
Transfer it to a serving plate or bowl, garnish it with coriander sprig and mint sprig.
Serve hot.
